Chicken supreme, vegan meatballs or quail with thyme stuffing can now be found in the menu of the Palacký University canteens. The new items, which have been added to the daily menu before the upcoming academic year, are marked with the NEW symbol in the menu.
"With the inclusion of specialties such as beef bourguignon with potato and celery puree or real tortelloni, fresh large salads or a new pasta preparation, we wanted to diversify the menu so that diners find their way to our canteens more often. Based on the demand, we have also enriched the menu with new types of fish served in new preparations, such as fillet of king prawn or zander with hollandaise or dill sauce," said Miroslav Paszyc, Head of Dining Services Department of the Accommodation and Dining Services.
The canteen is also trying to improve the service of meals - for example, the Caesar salad is served on a plate by the cooks only when it is served. The menu of side dishes is also being diversified, with classic potatoes or rice being replaced by zucchini potato pancakes, red lentils or cabbage salad with dill. Dessert is also added to the menu one day a week.
"We are also trying to focus on vegetarian dishes. In order to revive their offer, we have provided some of the cooks with external training focusing on the veggie food segment and we are preparing training sessions directly in our kitchen," added Libor Kolář, Head of Accommodation and Dining Services, adding that the canteen is also basing the planned changes on last year's survey among diners.
